What is “Optically Sorted”?

Optically sorted coffee is unroasted beans that have been sent through a $100,000 optical machine examining every bean individually, removing any beans with defects after comparing each individual bean against a database of bean defect photos. This costly process insures that your coffee beans are the best they can be, virtually perfect. This makes the coffee consistently delicious with no bad characteristics. Very few coffee suppliers use this due to the expense of putting your coffee through an optical sorter.
